A scullery is a room in the house, traditionally used for washing dishes and washing clothes, or as an overflowing kitchen. Duties performed in the kitchen include cleaning dishes and cooking utensils (or storing them), occasional kitchen work, irons, boiling water for cooking or bathing, and soaking and washing clothes. Scullery contains hot and cold sinks, sometimes slop sinks, drain pipes, storage racks, dish racks, work tables, various "copper" for boiling water, tubs, and buckets.

The term "scullery" has become unused in North America, because laundry takes place in utility rooms or laundry rooms.

This term continues to be used in the original sense in England and Ireland among the middle class, or as an alternative term for kitchens in some areas of England, usually Northern Ireland, Northeast England and Scotland, or in designer kitchens.

At US military facilities and most commercial restaurants, "slaughterhouses" refers to the section of the dining facility where pots and pans are scrubbed and rinsed (in assembly line style). Usually near the kitchen and serving line.

The kitchen is a rear kitchen located adjacent to the main kitchen, often to the rear of a nearby house of water supply, such as a public fountain or well, or near a barrel collecting rainwater, which is the preferred water for washing dishes. In houses built before the tap water inside the house, the sink is located on the outside wall. Because scullery is used for washing and water in large quantities must be brought in, made with solid flooring of brick, stone, terracotta tiles, or concrete. Although a sewer, known as a ground pipe, will carry dirty water out of the house, the floor tends to stay wet. The kitchen maid, or the person who washes the dishes in the sink, will stand on a wooden mat near the sink. In designing a kitchen, architects will be careful to place a room adjacent to the kitchen with a door that leads straight out to get water easily. However, for sanitation purposes (since so much dirt is processed in the kitchen) there is no door leading from there to the pantry or storage space.

Sink scullery came in pairs, one for hot water and the other for cold water. They are square or rectangular, shallow, and made of non-absorbent material, such as slate sinking in Chawton House or coated with copper to protect fine plates.

A common sink in the kitchen, where all types of liquids and materials are emptied, from green water to oily problems, must be made of non-absorbing material, such as a pot or fire clay. A private house in this neighborhood hired at 4 weeks was shown to me because the inmates had suffered from many diseases, dengue fever, measles, etc. Here in the backyard measuring about 10 feet by 5 feet I discovered that the latrine was only separated from the wall of the kitchen with a four and a half inch thick wall and it stood nine inches taller than the kitchen floor. By the toilet and the part that formed it is a place full of filthy discharges. The rain keeps these impurities in constant moisture, so that the contaminating material seeps through the rotting walls of the wooden floor, and yet against this wall there are shelves where cooking utensils are laid. On the morning of my visit, some of the potatoes, which had been peeled for cooking, were stacked on the part of the wall absorbed by water vapor from the secret service. When it rains, the amount of water that comes through the wall from the toilet and into the rake is much bigger and the kitchen is only separated from the living room by a door that generally stays open.

Sculleries Hospital

For maximum sanitation, the nineteenth-century British nurse Florence Nightingale recommends that porcelain sinks should be used in scullery installed in hospital wards. "The best sink for a rake machine is a new white porcelain sink recently introduced with hot and cold water.Attention should be given so that the waste pipe does not have direct communication with the closed channel, otherwise the dirty air will surely enter the RSUD."
